Sausage Italian Stew

2 lbs. turkey Italian sausage link, casings removed
1 cup chopped onion
¾ cup chopped green pepper
3 garlic cloves, minced
1 can (28 ounces) diced tomatoes, undrained
1 can (15 ounces) Italian seasoned tomato sauce
½ pound fresh mushrooms, sliced
1 cup water
½ cup beef broth
½ cup red wine or additional beef broth
1 ½ cups uncooked spiral pasta
½ mozzarella cheese

Directions:
1. Crumble sausage into a large non stick saucepan coated with cooking spray. Add the onion, green pepper and garlic. Cook over medium heat until meat is no longer pink. Drain.
2. Add the tomatoes, tomato sauce, mushrooms, water, broth, and wine. Bring to a boil. Reduce heat; cover and simmer for 1 hour.
3. Meanwhile, cook pasta according to package; drain. Stir into stew; heat through. Top each serving with 1 tbsp. cheese.
